Coconuts, from coconut-palm trees, are a major food source in many tropical parts of the World. How to Choose the Best Coconut Oil
The health benefits of coconut oil depend very, very much on how it is prepared. The best method is to use centrifuging on mashed coconut meat that is somewhat above room temperature. Coconut oil prepared in this way is referred to as ‘extra-virgin.’ Below about 76 degrees Fahrenheit (approximately 24 degrees Centigrade), the oil solidifies into whitish glop resembling Crisco shortening. Other methods of preparing coconut oil mostly involve significant heating; these methods yield a few percent more oil per coconut, but change the chemical composition of the resulting oil in ways that are generally very unfavorable for human health. In particular, ‘Refined, Bleached, and Deodorized’ (RBD) coconut oil is obtained by heating and compressing coconut meat, and is not usually perceived as even being fit for human consumption except when it is used just as cooking oil. When it is partially hydrogenated to raise its melting point, it becomes even less desirable nutritionally.

Most edible oils high in saturated fats are comprised of Long-Chain Triglycerides (LCTs).
